This is a very simple elderberry syrup your kids are sure to love. It can be made in the instant pot in under 30 minutes for a fraction of the cost compared to store-bought elderberry syrup.

Ingredients
1cupDried Elderberries
4cupsWater
1cm cubefresh ginger(Size of a sugar cube)
4lemons
1/2cuphoney(local is best)
1/2cupsugar
Instructions
Combine 1 cup dried elderberries, 3 cups of water, and fresh ginger in instant pot. Cook on high pressure 7 minutes.
Meanwhile, zest the peel of 4 lemons into a small sauce pan.
Boil 1 cup of water and lemon zest for 5 minutes. Remove from heat and stir in 1/2 cup of sugar. Cool for 15 minutes.
Juice the 4 lemons and set aside.
When elderberries have cooked for 7 minutes, do quick release. Let elderberry juice cool for 15 minutes, then add 1/2 cup honey.
Strain the elderberry mixture into a bowl or large mixing cup. (Hint- use a container that is easy to pour from). Be sure to mash the berries with a wooden spoon in the strainer to release all the juice. Discard berries.
Strain the lemon peel syrup.
Combine elderberry juice, lemon juice, and lemon syrup. Mix well.
