I have finally created an Instant Pot Elderberry Syrup my entire family enjoys!

This is a very simple instant pot elderberry syrup your kids are sure to love. Make it in the instant pot in under 30 minutes for less than $5 a batch.

Before I get started if you have found this recipe I’m sure you already know the benefits of elderberry syrup. I’m not going to go into all the reasons you should start taking 1 tsp a day, but here’s a great article if you want to read more.

How I arrived at this recipe:

I hate when you have to read a book to get to a recipe, so I’ll make this intro quick. I do want to give a little background on how I arrived at this recipe though!

After buying a batch of elderberry syrup, I knew this was something my family would want to add to our daily routine but I needed to find a cheaper way. I tried a few recipes that I didn’t love and I think I may have read just about every recipe on the internet.

I really wanted a sugar-free syrup recipe, but through trial and error, I discovered my kids hated the sugar-free syrups. If I wanted a syrup my kids would actually drink daily, I had to give up the sugar-free idea.

We also discovered we don’t really like the taste of elderberries or ginger. My family also gets those white mouth sores when we eat cinnamon (or tomatoes!), so I didn’t want cinnamon in my recipe.

We do love lemonade though! And we love my homemade lemonade recipe. I finally decided to combine my lemonade recipe, with the basics of elderberry syrup and arrived at the recipe you see below.

Because I didn’t actually think this recipe would turn out, I didn’t take any pictures of the process!! I promise I’ll take a few on the next batch.

Where to buy elderberries:

After tons of research and reading of reviews, I feel I can highly recommend the dried elderberries link below. If you read the Amazon reviews though, you will see several people complain that there are stems with their berries. I did not see any stems, but even if I did, it wouldn’t matter since you are straining and discarding all the berries after cooking anyone.

Well, here is my lemonade elderberry syrup I’m sure your kids will love.

1) Combine 1 cup dried elderberries, 3 cups of water, and a 1cm cube of fresh ginger in instant pot. Cook on high pressure 7 minutes.

2) Meanwhile, zest the peel of 4 lemons into a small saucepan.

3) Boil 1 cup of water and lemon zest for 5 minutes. Remove from heat and stir in 1/2 cup of sugar. Cool for 15 minutes.

4) Juice the 4 lemons and set aside.

5) When elderberries have cooked for 7 minutes, do a quick-release on the instant pot. Let elderberry juice cool for 15 minutes, then add 1/2 cup honey.

6) Strain the elderberry mixture into a bowl or large mixing cup. (Hint- use a container that is easy to pour from). Be sure to mash the berries with a wooden spoon in the strainer to release all the juice. Discard berries.

7) Strain the lemon peel syrup.

8) Combine elderberry juice, lemon juice, and lemon syrup. Mix well.

9) Store in glass mason jars in the refrigerator.

  • Instant Pot
  • Cutting board
  • Vegetable Peeler
  • Small Sauce Pan
  • Mesh Strainer

Ingredients

  • 1 cup Dried Elderberries
  • 4 cups Water

  • 1/2 cup honey (local is best)
  • 1/2 cup sugar

Instructions
